First of all, a citation is the same thing as a ticket. Second, what the cop was talking about was requesting a "stay" for the ticket. What that means is that if you don't get any new offenses within a certain period of time, usually 6 months or a year, the ticket will never hit your driving record. You won't be put on an active probation, more like an administrative probation to the court to ensure that you don't get any new offenses. If the judge and prosecutor agree to the stay, your insurance would not know about it because it doesn't hit your record unless you get a new offense. If the prosecutor is unwilling to keep the ticket off of your record, you can always ask that they (at least) reduce the fine.

Which court you go to depends upon your age when you were cited, not when you go to court, so you go to juvenile traffic court. Although a juvenile traffic hearing officer has power to suspend a license for up to 30 days (not six months), I think it most likely that your case will be handled as it would be in adult court: a fine in the area of $200 and dismissal if you go to traffic school.

You will be in front of a judge,maybe just a clerk...The main Q will be about your plea,you have 3 opts:Guilty,not guilty,no contest.If you plead "Guilty",the judge will take a look at your drv record and based on that,will make a decision on the amount of your fine...If you plead "not guilty"-the hearing will be set up on later day where your case will be heard,expect the officer to be there...if you plead "no contest"-it's almost the same like "guilty" plea...not really sure about the diff.

A ticket and citation are the same thing. An Officer in a plane or helicopter clocked you.
There is no requirement in any state I know of to sign a citation. I don't even ask people to sign them because it is an Officer Safety issue with me. A traffic citation (or ticket if you want to use that word) is no where close to an arrest.

It's a ticket- and your insurance will eventually find out because they randomly run computer checks and they always do find out at which point your insurance goes up.

Is it a speeding citation or a fix it with a warning? i recently was pulled over for speeding. i didn't have my registration and the officer cited me for that but it sounded as if he gave me a warning for the speed portion. on the citation it has the vc for the fix it portion, but just says verbal speed no code. did he cite me for speeding?
Doesn't sound like he did, sounds like you just got a fix it ticket.

It depends on a few factors:
a) the speed you were going
b) the speed limit of the zone you were in
c) the jurisdiction of the officer who pulled you over (county sherriff, highway patrol, city police)
My recommendations:
a) contest the ticket. State that you don't believe you were exceeding the posted speed limit. Ask when the radar detector used by the officer in question was last maintenanced. State your case and lay out why you should not be punished for this "oversight" by the officer, and ask the judge that if he decides not to override the citation/ticket that you be assigned to traffic school to correct the errror. If you do this in writing rather than by showing up in court, the officer will also have to respond in writing. If they do not, the citation is most likely dismissed. If you show up in court, the officer has incentive to show up in court as they may get overtime pay for the additional time spent arguing the case.
b) if you decide to not fight the citation, take traffic school, pay whatever fine is applicable, and have the item removed from your record. Although you'll have a fine from paying the ticket, you will save money by not having an increase in your insurance rates for 2-5 years , depending on your company.
